Garden Fresh Breakfast

I do not like routine.  It’s plain, boring and too predictable.  I want adventure and change.  Even as a child I would rearrange my room just for the fun of it.  But routine is necessary, especially for this hypoglycemic, ADHD girl.  I start each morning at 5:30 am.  A cup of coffee and a quiet, sleeping house.  It it is most wonderful hour of the day.  I read my Bible, I walk through the garden, I watch the sun rise.  Honestly, this is one of the few routines I anticipate.

By 6:45 I’m up and having breakfast.  Scrambled eggs and toast.  Every day.  Every. Single. Day.  Because if I don’t my blood sugars get so out of whack that the rest of the day is a loss.  I’m so sick of scrambled eggs; but they seem to be the only protein that starts my day off right.  So lately I’ve been trying to liven them up a little.  I’ve used cheese in them for months so that’s getting old.  I added bacon bits for awhile but wasn’t overly impressed.  So for the past few days I’ve really stepped up my game.  I’ve started adding garlic powder, crushed red pepper and a little Italian seasoning.  It’s SO MUCH BETTER!  And then today I remember there was a just a bit of garden fresh zucchini left in the refrigerator.  I pulled it out, sautéed it with some olive oil and mixed it in with my eggs.  Ya’ll!  It was SO GOOD!!!

It was so good I had to take a picture and share it with you.  Don’t mind the Ronald McDonald plate!

So at least for breakfast I was able to step out of the dullness of routine.  I still have to grind the coffee and prep the pot for tomorrow.  I still have to make sure the trash gets out every Tuesday.  I still have to feed the boys at 7:30 every morning.  I still have to wash and fold laundry every time the hamper is full.

But at least for today there was a happy break from the mundane.  Cheers to new adventures!
